There are red, orange and yellow forms, which keep their colours after cooking and contains twice as much vitamins. The long shaped Spanish peppers dry in long shiny red chains on the balconies of the houses in our village. They are to be grounded into paprika powder, dulce or picante. The hot taste comes from the high percentage of capsaīcine. These peppers are about 12 cm (2,5 inches) long. There are many other peppers such as tabasco- en cayenne peppers. We tried quiet a lot of varieties, because we like it hot. Pimiento asado is a real Andalusian recipe.

Er zijn rode, oranje en gele vormen, die na koken hun kleur behouden en tweemaal zoveel vitamine C bevatten als de groene. De langwerpige glanzend rode Spaanse pepers hangen bij ons in het dorp te drogen aan de balkons, ze worden gemalen tot paprikapoeder, dulce of picante. De scherpe smaak komt van het hoge capsaīcinegehalte. Deze pepers zijn ongeveer 12 cm lang. Er zijn talloze andere pepers zoals tabasco- en cayenne pepers. Wij probeerden inmiddels heel wat varianten uit, want we like it hot. Pimiento asado is een echt Andalusish recept.
